Risotto de Polvo na Bimby



Para começar, esqueci-me da salsa.... mas pronto, como também sou um bocado da opinião que a salsa é como o melhoral, não faz bem nem faz mal... paciência !!!!
Esta receita é da Revista de Dezembro de 2012.

Ingredientes:

15 gr salsa
90 gr queijo parmesão (pus 50 gr)
1 kg polvo descongelado cortado em pedaços
1 cebola pequena com casca cortada ao meio
(eu não pus a casca)
150 gr. vinho do Porto
100 gr. agua mais agua que baste para cozer
(achei isto mt confuso, alias nem percebi o que queria dizer, nem a que se referia)
30 gr de manteiga
4 dentes de alho
20 gr azeite
50 gr chalota
300 gr arroz para Risotto
1 colher chá de sal

Preparação:

Coloque no copo a salsa e pique 2 seg. vel. 7. Retire e reserve.

Coloque no copo o queijo e rale 10 seg. vel. 9. Retire e reserve.

No copo limpo, coloque o polvo, a cebola, 50 gr. de vinho do Porto e a água (foi aqui que eu não percebi se eram os 100 gr. ou a quantidade suficiente para cozer, mas como achei 100 gr. pouco, pus 400 gr. e correu bem) e coza 35 min /Varoma / vel. 1. Retire e reserve o polvo e a agua da cozedura.


No copo limpo coloque a manteiga e o alho e pique 5 seg. vel. 5. Baixe com a ajuda da espatula o que ficou na parede do copo e refogue 5 min / Varoma / Vel. 1. Retire e reserve.

Coloque no copo o azeite e a chalota, pique 5 seg., vel. 5 e refogue 5 min / Varoma / vel. 1.

Adicione 100 gr. de vinho do Porto, o arroz e o sal. Passe o caldo da cozedura para o copo pesando, e adicione agua até perfazer 700 gr. e coza 8 min. / 100 graus / pas invertidas / vel. colher de pau.

Retire a tampa, envolva com a espatula para soltar o arroz do fundo do copo e coza mais 8 min. / 100 graus / pas invertidas / vel. colher de pau.

Adicione o queijo reservado, o polvo cortado em pedaços, e a manteiga com alho. Envolva com a espatula e deixe repousar dentro do copo durante 2 minutos. Silva polvilhado com a salsa picada.
